(210 calories) recipe for one portion
1 small stack of leeks (120g)
1 potato (approx. 150g)
1 teaspoon of olive oil
500 ml of vegetable stock
salt, pepper, chives for seasoning
Wash the leeks and slice the stack into small rings. Peel and cut the potato into small cubes. Put the olive oil into a pan and heat the potatoes and leeks until glazy. Then ad the vegetable stock, ad seasoning to taste and slowly cook for about 15 minutes. Take the soup of the cooker and puree the vegetable soup. Season again if necessary and ad chives when serving the soup. For extra flavour you could ad a dot of sour cream or creme fraiche, which will bring the calorie count up just a little.
